Ingredients To Make Baked Stuffed Avocado

  • 3 avocados – halved and pitted but leave the skin on
  • 1/2 cup of mozzarella (shredded)
  • 1/2 cup of Swiss cheese (grated)
  • 2 eggs
  • 1 tablespoon of fresh basil

How To Make Stuffed Avocado

Preheat the oven to 350°F (180°C).  Place the avocado halves in an ovenproof dish cut side up. 

In a mixing bowl combine the mozzarella and swiss cheese along with the eggs. Sprinkle with salt.

Spoon the egg and cheese mixture onto the avocado halves and then bake them for 15-17 minutes or until the egg is cooked through and the cheese is nicely melted.

Garnish with some fresh basil and serve.

Try to buy avocados that are all the same size so they all bake at the same pace.

Pick up the avocados a few days before you want to prepare these stuffed avocados as it will take a few days for them to ripen.

Make sure to use just ripe avocados. If they are still hard give them another day or two to soften up and ripen. Unripe avocados will not have as much taste and may be difficult to cut open.

How To Store These Vegetarian Stuffed Avocados

Store leftover stuffed avocados in the fridge for up to 3 days in an airtight container. I do not recommend freezing them. 

To reheat the avocados, place them in the toaster oven or microwave. Or eat them straight from the fridge. They taste pretty darn good cold too.
