Ingredients 

  • 4 eggs
  • 1 tablespoon of sesame oil
  • ½ cup of blue cheese (crumbled)
  • 1 tomato (thinly sliced)
  • Pinch of salt and pepper

Beat the eggs in a mixing bowl and season with salt and pepper. 

Heat a frying pan or skillet over medium heat and warm the sesame oil. 

Pour in the eggs and cook using a spatula to swirl the eggs around the pan.

Sprinkle the blue cheese on half and then fold the eggs over to enclose the cheese filling.

  • Any kind of cheese will work in an omelette in my opinion; feta, parmesan, cheddar, or mozzarella. You name it and I am pretty sure it will taste great. 
  • Throw in your favorite vegetables; diced onions, peppers, and mushrooms. Whatever you have in your fridge right now is probably fine. Or frozen veggies work well too. No need to thaw beforehand them either just cook them until they are warmed through.
  • Add some spice by sprinkling the egg mixture with red chili flakes, sriracha, chipotle peppers, or a jalapeno. 

Tips and Tricks/Notes

  • The egg section at the grocery store can be a bit confusing to navigate with so many options available these days. However, any kind of egg will work to make this a tasty omelette; white, brown, free-range, organic, and omega-3 eggs all work well in omelettes. 
  • Coat the skillet or frying pan well so the eggs don’t stick to the pan. Eggs are notorious for sticking to the pan.
  • There is no need to add water or milk to this blue cheese omelette though some recipes call to add milk or water we don’t think it is necessary. 
  • If you don’t have sesame oil on hand any cooking oil will work.
