Ingredients To Make This Vegan Soda Bread Recipe

  • 3 and 1/2 cups (437g) All Purpose Flour
  • 3 Tbsp White Granulated Sugar
  • 1 tsp Baking Soda
  • 1 and 1/2 tsp Salt
  • 2 Tbsp (30g) Vegan Butter (Cold)
  • 1 and 1/2 cups (360ml) Vegan Buttermilk (Lemon Juice + Soy Milk) *

How To Make This Dairy-Free Soda Bread

Prep time: 10 mins

Preheat the oven to 425°F (220°C).

Combine the dry ingredients; all-purpose flour, white granulated sugar, baking soda, and salt in a mixing bowl and whisk well until completely combined.

Using your fingers add the vegan butter and mix into the flour until crumbly.

Make the vegan buttermilk by measuring 1 ½ tablespoons of lemon juice into a  large glass measuring cup and pouring in soy milk to the 1 ½ cups line or 360 ml. Allow the milk to curdle for a few minutes.

Pour the buttermilk into the flour mixture in the mixing bowl and stir with a spoon until the mixture beings to stick together and forms a shaggy dough.

Sprinkle some flour onto your working surface and your hands. Place the shaggy dough as well as any loose flour bits on the surface. Using your hands incorporate the loose bits to form all of the dough into one ball.

As you work with the dough gradually flatten it into a flat round disc shape. If the dough is still shaggy it’s okay. At this stage of shaping the mixture, it is important not to exceed kneading the dough 8-10 times.

Once you get the dough into a flat round disc, place it on a parchment-lined baking tray.

Using a sharp knife cut a deep X into the top of the dough and bake for 35 minutes or until golden brown.

Soda bread belongs to a category of bread known as quick bread. Quick breads use baking soda to help the bread rise as opposed to traditional breads that use yeast.

Soda bread usually contains all-purpose flour, buttermilk, and salt along with the baking soda.

  • Add raisins, dates, or cranberries along with some cinnamon for a sweet loaf of bread.
  • Throw in chopped olives for a loaf of savory bread.

Tips and Tricks/Notes

  • It is important to measure the flour accurately. If you are using measuring cups the best way to measure the flour is with the spoon and level method. Scoop the flour into the measuring cup and use a knife to level it off.  Try not to scoop the flour or pack it into the cup. Another method is to use a food scale to weigh the flour which will give you the most accurate results.
  • It is not necessary to add the white granulated sugar if you are following a sugar-free diet. You can omit it without altering the recipe. The reason it is included is to provide a good balance of flavor but note the bread doesn’t taste sweet.
  • If you don’t have any soy milk you can use a different plant-based milk to make the vegan buttermilk; almond or oat milk will also work.
  • It is imperative that you don’t knead the dough too much. Unfortunately, over-kneading will make the dough tough. Be mindful of kneading the dough 8-10 times during the process of shaping the dough into a disc shape.
  • If you want to make this bread gluten-free you can substitute a 1-1 gluten-free flour. Note, I have not prepared it using gluten-free flour.

How To Store This Dairy-Free Bread Recipe

You can store this soda bread in a covered container or plastic bag at room temperature for up to 3 days. As with most bread, it tastes the best on the day of baking but is perfect for toast on the second and third days.

This bread is freezer friendly for up to 3 months. If you want to be able to grab a slice when you need it then you can cut the bread and freeze the individual slices. 

Just a note to wait until the bread is completely cool before placing it in the freezer on the day you bake it to lock in the freshness.

  8. Place the round, flat piece of dough onto a baking sheet covered with parchment paper. Cut a deep X into the dough’s top with a pointed knife.
  9. Bake for 35 minutes until golden brown.
