How To Make Homemade Vanilla Pudding

In a medium-sized saucepan, combine white granulated sugar, cornstarch, and salt and whisk together.

Slowly add the soy milk and whisk to combine on medium heat. Continue whisking until the mixture heats up and comes to a boil. Let it boil for one full minute, whisking all the time until the mixture becomes thick.

Remove the pot from the heat and add the vegan butter and vanilla extract. Whisk to combine.

Pour the mixture into small drinking glasses, ramekins or dessert bowls. Using a spoon make sure the pudding is smooth and evenly distributed.

If you want to prevent the skin from forming on the top you can cover the pudding with plastic wrap making sure the wrap sits directly on the surface of the pudding. Note this is optional. If you don’t mind the skin, skip this step.

Place your bowls or ramekins in the fridge and let them set for 2-3 hours.

Garnish with vegan whipped cream and or crushed Golden Oreo cookies. Note this is optional. Feel free to top the vegan pudding with whatever you like.

There’s something about eating pudding that takes us back to our childhood. Are you with me on that? Many of us grew up on pudding made from a mix. It just seemed like the only way to make it. Homemade was never really an option.

These days, however, homemade pudding recipes are abundant and so easy to prepare. Even this vegan vanilla pudding is a cinch to make. No compromising on flavor or texture in this vegan pudding. You’ll never miss the dairy, I guarantee it.

  • To change things up a bit add a teaspoon of espresso powder or cinnamon to the pudding.

Tips and Tricks/Notes

  • Cornstarch acts as the thickening agent in this recipe. If you don’t have any on hand you can try using tapioca, arrowroot, or agar agar. Note, I have not made the pudding with any of these substitutes so I can’t guarantee you’ll get the same pudding-like texture.
  • Soy milk is a great creamy, non-dairy option but most likely any non-dairy milk, like coconut, that heats well will work in its place. Make sure to buy plain soy milk. Look for unsweetened as well as the pudding does not need any more sugar.
  • Vegan butter can easily be substituted for coconut oil though vegan butter does impart a nice buttery flavor that compliments the pudding well.
  • Because this vanilla pudding needs some time to set it is the perfect make-ahead dessert. Making this easy vegan pudding the day before you want to serve it is ideal.
  • Don’t compromise on the vanilla, I suggest you use real vanilla extract and not imitation vanilla extract.
  • Make sure the white sugar you use is vegan as some white sugar may not actually be vegan.

Storage

This dairy-free vanilla pudding will keep well in the fridge, covered for up to one week. I do not recommend freezing this nondairy vanilla pudding.
