If you’ve never tried a baked stuffed avocado you don’t know what you’re missing. Rich, creamy avocados filled with cheese and eggs are absolutely delicious.

- 3 avocados – halved and pitted and leave the skin on
- 1/2 cup of mozzarella (shredded)
- 1/2 cup of Swiss cheese (grated)
- 2 eggs
- 1 tablespoon of fresh basil
Instructions
- Set oven to 360 F. Lay avocado halves in an ovenproof dish. In a bowl, mix both types of cheeses, pepper, eggs, and salt.
- Split the mixture into the avocado halves.
- Bake for 15 to 17 minutes.
