Description

If you’ve never tried a baked stuffed avocado you don’t know what you’re missing. Rich, creamy avocados filled with cheese and eggs are absolutely delicious.

Perfect for breakfast, lunch, a light dinner, or even as an appetizer at your next weekend brunch.


Ingredients

  • 3 avocados – halved and pitted and leave the skin on
  • 1/2 cup of mozzarella (shredded)
  • 1/2 cup of Swiss cheese (grated)
  • 2 eggs
  • 1 tablespoon of fresh basil

Instructions

  1. Set oven to 360 F. Lay avocado halves in an ovenproof dish. In a bowl, mix both types of cheeses, pepper, eggs, and salt.
  2. Split the mixture into the avocado halves.
  3. Bake for 15 to 17 minutes.
  4. Serve with basil
