Ingredients
- 2 cups of self-raising flour
- 3/4 cups of caster sugar
- 1 medium egg
- 1/4 cup of vegetable oil
- 1 cup of milk
- 125g of Raspberries
- 100g of chocolate (chopped or chips)
Instructions
- Preheat the oven to 350°F (180°C) and prepare the muffin tray with paper pans.
- Sift flour into a bowl, and then add and mix in the sugar.
- In a separate bowl mix the egg, milk & oil.
- Making a well in the dry mixture, pour the above wet ingredients.
- Gently fold until you get a slightly bumpy mixture
- Then gently fold the chocolate & raspberries in until all mixed
- Add to muffin cases
- Bake for 25 -28 min until an inserted toothpick comes out clean or with a few moist crumbs on it.
