Ingredients

  • 1 + 2/3 cups of unbleached all purpose flour
  • 2 tablespoons of organic sugar sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1 + 1/2 cup of soy or almond milk
  • 1 tablespoon of vanilla extract

Instructions

  1. In the mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  2. Mix well after adding the milk and vanilla. Although the batter could be a little lumpy, make sure there are no flour clumps.
  3. On medium heat, lightly coat a cook pan with vegan butter or olive oil. Place 1/4 cup of the batter in the pan.
  4. Using a pancake flipper or spatula, turn the pancake over once the edges begin to brown. After 30 seconds, check for some light browning on the bottom.
  5. Add plant-based butter, fresh fruit, or maple syrup over the top.
