- 1 + 2/3 cups of unbleached all purpose flour
- 2 tablespoons of organic sugar sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1 + 1/2 cup of soy or almond milk
- 1 tablespoon of vanilla extract
Instructions
- In the mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- Mix well after adding the milk and vanilla. Although the batter could be a little lumpy, make sure there are no flour clumps.
- On medium heat, lightly coat a cook pan with vegan butter or olive oil. Place 1/4 cup of the batter in the pan.
- Using a pancake flipper or spatula, turn the pancake over once the edges begin to brown. After 30 seconds, check for some light browning on the bottom.
- Add plant-based butter, fresh fruit, or maple syrup over the top.
