- 3/4 cup of White Granulated Sugar
- 3 tablespoon of Cornstarch
- 1/4 teaspoon of Salt
- 2 and 1/4 cups of Soy Milk
- 2 tablespoon of Vegan Butter
- 1 teaspoon of Vanilla Extract
Serving (Optional):
- Vegan Whipped Cream
- Crushed Oreo Cookies
Instructions
- Whisk together cornstarch, salt, and white granulated sugar in a saucepan.
- Slowly pour in the soy milk and mix it in. Stir continuously while heating on medium heat.
- Bring to a boil, then simmer, stirring frequently, for one full minute or until thickened.
- After taking it off the heat, mix in the vegan butter and vanilla extract.
- Smoothly pour into ramekins or small glasses.
- You can cover the puddings with plastic wrap so that it is pressed firmly against their surface to prevent the puddings from developing a skin on top.
- Set in the refrigerator for two to three hours.
- Serve with Vegan Whipped Cream and Oreo cookie crumbs on top (this is optional).
