This blackberry chia seed pudding recipe makes up a great breakfast, snack, or even dessert.

It’s vegan, gluten-free, refined sugar-free, and ideal for those following a plant-based diet. Though suitable for anyone and everyone this chia pudding really is a powerhouse of nutrients.

Ingredients

Units Scale
  • 1/4 cup chia seeds
  • 1/2 cup blackberries (fresh or frozen)
  • 1 cup (250 ml) almond milk or coconut milk (not canned)
  • 5 table spoons of coconut yogurt (any type of yogurt is fine)
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Add all ingredients to a blender
  2. Process in the blender until thick
  3. Divide the mixture between cups/small jars and chill for 1-2 hours (or overnight)
  4. Serve and enjoy!
