  • 1 tsp. minced garlic

How To Make Cajun Sirloin with Mushroom Leek Sauce

Let the steak marinate in the Cajun seasoning for at least 5 minutes.

Heat the oil in a large skillet over a moderately high flame.

Cook the marinated steak for 7-10 minutes on each side or until your desired level of cooked (rare, medium, well done).  If you like your steak medium rare you may need to shorten the cook time. Using a meat thermometer, it should be 65 degrees Celsius to ensure the meat is fully cooked. Remove the steak from the skillet and place it in the oven to keep warm.  Don’t turn the oven on too high as you don’t want the steak to continue cooking, you just need to keep it warm.

Melt the butter in the same pan and then add the leeks and mushrooms. Cook until they are both softened. Add the garlic and cook until it becomes fragrant, about a minute or two.

Stir the pan well to remove the bits of food that may be stuck to the sides and then add the wine, pepper, and salt. Bring the wine to a boil and cook until it reduces by half.
