How To Make the Best Chewy Chocolate Chip Cookies

First, preheat your oven to 350°F (180°C) and line a baking tray with parchment (or spray with cooking spray)

In a large mixing bowl, measure out your white and brown sugars, salt, and softened butter. Mix with a mixer until light, fluffy, and fully combined. Clean the sides of the bowl with a spatula when needed.

Add your egg and vanilla into the batter and mix well for about 1 minute or until fully combined. Then, add in baking soda and flour. Add your flour slowly, about ¼ cup at a time, mixing well between each addition.

Finally, add in your chocolate and give one last good mix for about 20 seconds to distribute it throughout the batter.

Scoop even-sized portions of your liking onto the baking sheet. For a standard-sized cookie, use about 1 ½ tbsp of dough. For a bite-sized cookie, use a bit less than a tbsp. For a bakery-sized cookie, use 3-4 tbsp. Leave plenty of room for your cookies to spread.

Bake for 10-12 minutes for bite-sized cookies, 12-15 minutes for standard-sized cookies, or 14-17 minutes for bakery-style cookies.

Remove from the oven and allow to rest on the cookie sheet for 30 seconds to 1 minute. Then, transfer to a cooling rack. When you can’t wait any longer, enjoy with milk or a cup of coffee!

Prep Time

These cookies take 10 minutes to prep before popping them in the oven.

What’s the difference between regular and chewy cookies?

Regular cookies are crispy and crumbly when you bite into them. Chewy cookies are soft and tender when you bite into them and have a more moist texture. The outside usually has a light crispness. This is because of the amount of sugar and the type of fat (butter) the recipe calls for. Chewy cookies are usually made with more brown sugar, which contains molasses and adds to their moist texture.

Variations

I’m a fan of traditional chocolate chip cookies, but you can certainly make some simple additions this recipe to change up the flavor. Here are some easy ways:

  • Add in nuts: Mix in your favorite nuts for an extra crunch. Great options are chopped walnuts or pecans.
  • Add spices: Try adding in a pinch of cinnamon or nutmeg, especially good on holiday cookie plates.
  • Mix it up with different chocolate: Try using a combination of dark, milk, and white chocolate. You can use chopped chocolate bars or chocolate chips and chunks. You can use regular-size or mini chips too.
  • Add dried fruit: Dried cranberries or raisins are yummy. You can replace your chocolate with fruit or use both.

Ingredient Substitutions

Butter: You can use salted butter. Just reduce the amount of salt in the recipe. You can also use margarine or plant-based butter but the cookies may be less chewy.

Flour: Use a gluten-free flour blend to make these cookies gluten-free. Check your other ingredients too, to verify they’re gluten-free.

Sugar: To reduce processed sugar, you can substitute coconut sugar or maple syrup for the white and brown sugar. This substitution may also produce less-chewy cookies.

Tips & Tricks and Recipe Notes

  • Chill your dough. Put your dough in the fridge for an hour before baking to help your cookies hold their shape. This also helps them not to spread too much, so it’s especially helpful when making larger cookies.
  • Space the cookies out: Spread out your balls of cookie dough on the baking sheet to allow for even cooking and so they don’t touch when spreading.
  • Don’t overbake: Remove the cookies from the oven when they’re just turning a golden brown. They’ll keep baking and firming up as they sit on the baking sheet.

How to Store

Room temperature: Store the cookies in an airtight container at room temperature for up to 3 days.

Freeze: You can also freeze the dough or the baked cookies for up to 3 months. Just let them thaw at room temperature before serving or baking.

You can double or triple this recipe. Just add your ingredients slowly. If you double or triple the recipe, I suggest you use a stand mixer as the dough might be too dense for the motor of your hand mixer.

FAQs

What’s the secret to making chewy cookies?
